Really depends on how long you've been into it. There's still some decent stuff but really really rare. This season the only thing new that is decent is Spy x Family. Otherwise I just find it all boring, and the girl beats up boy, or boy desperate for girl/societies acceptance is passe.
Past that, the only anime I really follow is One Piece. Been a fan for 2 decades, and Oda hasn't disappointed. Latest revelations in the manga have ensured that the ride remains fun, and "cartoon" wink hi-jinks will continue.
I’ve watched off and on for a while. I’m an 80s baby so my first exposure was Robotech and Sword art Online. I recently saw Fist of the North Star which I loved. I have been meaning to see One Piece and Attack on Titan as well

Jin Roh: The Wolf Brigade, Genocidal Organ, Redline (cringey but the animation and OST are fantastic), Darker than Black, Ninja Scroll, Knights of Sidonia (cringey but animation & OST), Hagure Yuusha no Estetica, Disastrous life of Saiki Kusuo, Drifters, Code Geass, Goblin Slayer, Great Teacher Onizuka, Hellsing Ultimate, One Punch Man, Yamato 2199, Speed Grapher, Yukikaze
