Red hair is cool. I do not understand why Hollywood is so against it

Because, much like blonde hair and blue eyes, it's chiefly associated with white culture. Replacing it in media is a symbolic gesture of what they're doing in real life with the mass flood of immigrants being used to replace national citizens.
