To be fair, only Grace really interacts with Emily. Leon's too busy kicking zombies and spouting one-liners to be a dad.
He's no Joel Miller or Sebastian Castellanos, true, but he is a capable and supportive White male which is a rarity in the shit-ocean of today's DEI slop. You could argue by being hands-off he's achieving the "fatherly" role of fostering independence (and it's nice that Grace never becomes a cunty girlboss type even at the end). Though he's undeniably a mentor figure to Sherry all the while.
