If they attempt to force it through, alongside lawyering up, make sure to inform food safety that you saw official policy that there are barefoot people putting their feet in the cooking equipment. Keep it simple, keep it factual. Keep it neutral of religious things so the inspectors don't get pressure from DEI on above on their side too.
