There's a gigantic difference between touching a piece of bread when eating something like a sandwich and scooping up sauce-covered rice with your fingers, thn shoving your fingers into your mouth like a barbarian. Pretending otherwise is tremendously disingenuous, like something a redditor would do.
So many breaded things were invented simply as a portable container for food that you could put in your pocket. And, back in ye olde days, said breading often would be discarded rather than eaten. Hell, even today people might hold one end of a sandwich, eat it, and then not finish the bit of bread they were holding.
And yeah, bread is dry. Even more dry back in the day.
