Ffs. French fries arent even hard to make. A bag of potatoes costs a fraction of one of.those pre-made bags.
A 5 dollar mandolin slicer last for years and then it just soak, dry, and bake. 10 minutes of prep, 3 hours of soak.
I quit buying that pre-made shit years ago
try fermenting the potato before baking. The ferment will smell pretty bad because potatoes are like that, but the lactic acid added by the ferment produces the best damn fries you'll ever each. Plus the texture is better.
