Shop owner could "tamper" with the local device, sure. But IIRC the owner backed up the data himself for a personal copy because he didn't think the FBI would actually investigate it after he turned the laptop over to them. Of course he was right because the FBI is a corrupt entity.
The real bombshell of the laptop was the email communication though, and there is no way to fake the DKIM keys of those communications. Sorry "journalists".
