The intermingling of those cultures with black slaves is also where a lot of names (Tyrone is Irish), food (fried foods were Scottish for field workers because the coating held well over time), and social practices (anti-reading, porch lazing, slight culture) were all Scot Irish traits that the New England culture despised.

Also, frying food is Energy Boosting 101. Take a cheap piece of food, coat it with breading, fry it in oil/tallow/lard. Instant calorie increase.
