You could just write original works with minorities involved, there's plenty of historical events and figures to work from (though if in Africa it'd shatter the narrative of 'white man came an enslaved us')
Or just do what Japan does and make something that's like another work but has a twist, I've had two different magic school animes this year alone. You can easily do something like that based in Africa and have something with a witch doctor of something.
