It is a reference to when you see some bullshit study or lawsuit and then go look the person up on wikipedia and find their early life section says 'born into a Jewish household' or some similar variation at a rate which greatly exceeds their less than 2% fraction of the US population.
Once you've noticed that, there are a few possible answers to the question 'why though' that will pretty much decide which kind of right winger you turn into.
It's a... I'd say joke, but more noticing patterns in things where people with -berg or -stein, etc, tend to be jews, and under early life sections on wiki it always mentions a Jewish parent (usually mom), etc.

It’s a very pervasive characteristic to the point where it is shockingly rare to find a Jewish woman who isn’t like that.
Can be tricky to tell sometimes however, since some of the surnames are also common amongst those of German origin.
Some are not even remotely subtle though. IE, various surnames that include "gold" in the name.
That's because subversion is so engrained in the culture, they need to track culture/ethnicity by matrilineal lines, as an anti-cuckoldry measure.
