Bacon wrapped scallops are delightful. Cooked right you have a smooth creamy scallop wrapped in crispy bacon.
It’s a very complimentary pair of flavors and textures.
For some reason my brain expects something greasy and salty overpowering an almost delicate flavor and texture, lol.
You generally grill them, so that the excess fat drips off, and you aren't left with any grease.

For some reason, I have this impression of bacon always being greasy. Not that that's a bad thing, lmao.
There's this thai place that at least used to be in cedar rapids (I havent been back in a while, and they had a flood a few years ago), that made a Seafood szechuan dish that was amazing. Shockingly, it had actually scallops, not just shark fins, lol.(I dont mind the fins, honestly, they're just clearly not scallops)
Really good stuff. Spicy, but well flavored.
