I'd honestly like to see ethnicity, economic, and regional, backgrounds of different Indians, wrt disgust.
One of my favorite hole in the walls ever made Indian street food, and it was delicious. They had open doors to the kitchen, which always looked hygienic, a single always clean bathroom, 100 health inspection scores every time, and it didn't smell any stronger than a typical Thai or Vietnamese restaurant. The food wasn't spiced to Hell and back, and they instead relied on the pungency of fresh veggies for much of the flavor and aroma. But, it was still Indian AF.
Other places have been in between that and needing a hazmat suit. I make a point to go to the bathroom, on the first visit to any Indian or SEA type place, grocery stores included, and sometimes I've noped right out, from that. Given how much disgust response appears to be genetic, it would be a safe bet that they are from not only different caste origins, but likely very disparate in other ways, too.
I've done that not just ethnic food but western too. Had friends go to a place in a more run down area, looked inside, skin crawled, noped out and just settled with a chocolate bar from a shop nearby.
It's those instincts that means I have to date NEVER had food poisoning.
