I find watching most sport boring as well, never understood it, I'll watch MMA and UFC clips a bit, but that's mainly because I'm studying other peoples' techniques on the side to see what I might end up against out there one day. Another part of UK culture that meant I couldn't gel with the normies is that people worship football ( soccer ) here big time, it's almost like a religion.
Its also a great way to create and understand division without actually usually being divided.

It's also about watching something done well. I can watch Norm Abrams build wooden furniture or Bob Ross put happy little bushes on canvases or world record non-tool-assisted speed runs or Peyton Manning run an offense.
It's cool to see a level of mastery of a craft, even if the craft is throwing a ball or shaving seconds off of a Super Metroid run. Helps to have more than passing familiarity with an activity to appreciate watching it as well, but it's not strictly necessary.
Sure I get that aspect, at the same time though just to amuse myself and confirm my prejudices I watched a UFC fight and saw two guys going at it, okay. Then this guy who was supposed to be in the pro leagues was backing off constantly and started literally scuttling around the edge of the octagon because he was clearly worried about being hit and his opponent chased after him lol.
