I unironically would suggest you sometimes look up the history of food as it's crazy, like how potatoes were thought to be poisonous and only a king could cure you or that tomatoes could kill people.
Veal exists because the stomach lining of a calf has necessary enzymes to covert milk to other dairy products, like yogurt and whey.
A stomach or two can get a household through a year, so veal was a delicacy out of rarity.
