Don’t know why I didn’t think of this until just now, but we had a “pandemic” that forced most old people to lockdown with nothing to do for almost two years. Can you imagine a better time for someone like GRRM to focus on and finish his books? If he didn’t do it then, he’s never doing it.
It's just a conspiracy theory, but some people say GRRM didn't even write the books, his assistant who later quit did. Again, conspiracy theory, mostly unfounded, I'm certainly not claiming that, but it would explain some things. He might actually be incapable of writing the last book, and is just wasting time.

I'd do that for a bit, years ago. I quickly stopped when it turned out it was just
A) complaining about people asking if he was done with the book yet
B) talking about the food he was stuffing down his triple-chinned gullet
C) wasting time going to conventions and doing "fun" things while talking about how he was working SOOOO hard on his book for realsies
