also who's the target customer? every household has a fridge, even college dorms have mini fridge in the room and milk consumers usually just finish it in couple days, you either have a habit of drinking milk and just buy more on your weekly grocery shopping or you rarely have milk and just buy a small carton for use in recipes when needed, I really don't see a market for it in the US when supermarkets, refrigeration and transportations are readily available for most of the population.
Of UHT milk? Who isn't? Around here people usually buy twelve packs of 1 liter cartons. That way you only have one opened pack in the fridge and the rest in the store room. Outside of summer you don't even have to put it into the fridge if you use it within a couple of days.
where are you? I don't see the market in US where most households go grocery shopping at the supermarkets at least once a week anyway, those without personal vehicles might have to go every 2 or 3 days. you can even buy refrigerated milk at the gas station marts. is going to giant supermarkets with 25% of the floor space dedicated to refrigerated goods not a thing where you live?
Germany. We go grocery shopping once a week, too, but we only buy milk every couple of weeks. Supermarkets tend to be smaller than what I've seen in the US but there are usually several different chains in the same area.
No real idea why most milk here is UHT. It's more convenient and tastes the same (although some people say otherwise) but I have no idea when it started. You can still buy "fresh" milk in supermarkets but that's usually just a tiny section in a refrigerated shelf vs several pallets of UHT milk.

I live in America and I buy shelf stable milk. Sometimes my family wants milk. Sometimes they don’t.
Sometimes they won’t drink or use milk for two weeks.
Shelf stable means I don’t have to worry.

yeah seems like it's a response to limited fridge space in stores, space just really isn't a concern here
