It is always important to attack the "of color" framework because that is how they isolate white people.
Press them on if Chinese are "students of color" then point out how awesome they are at math.
Make them clarify that when they say "of color" they really mean black.
I think that concession is so far past the point of cognitive dissonance that it's not even possible.
Casual trolling reminder the plural of "PoC" is pronounced "pox", as in curse/plague.
