I have considered Greece, but only ever for the ancient Roman stuff. I don't know what modern Greece has to offer that could inspire me to visit. For instance, I don't care for much Mediterranean food at all.

Eh, I think you mean ancient Greek stuff. There is some Roman stuff as well, but the Parthenon wasn't Roman.
