Lowercase everything may be technically correct but if we're going to assign racial groups to colors, using uppercase isn't the worst, but it has to be consistent.
It also could just be them defaulting it to proper noun status as an adjective subconsciously. The same way you'd capitalize something like German, despite it being the same level of descriptive, so your brain does the same to White/Black.
