I've been cooking a lot less lately, but from time to time, I do still make some great rice dishes. I recently learned the basics of a mapo tofu recipe, but I'm lacking the specific ingredients to make it truly authentic. I can still make it spicy as fuck though, roasting dried chili peppers in olive oil.
Mapo tofu is so good. Get some good chili oil or whatever the hell they normally use to get the spice. They have to have that stuff if you have an Asian grocery store near you.
