I've got time to look into that next week, if you all promise to actually read it and not just blindly downvote.

Edit : Does anyone know a free Office substitute? I'm not comfortable having it tied to my Office 365 account.

There are several free Office substitutes like LibreOffice, but you can also buy a stand-alone copy of 2016 or 2021. You can also make a burner account at office.com.

If you just want to avoid any online connectivity at all there's always the high seas.
