I agree that it's more red than I'd like, but with a proper steak or slab of meat, you only really need to cook it well on the surface in order to kill most bacteria that hooked onto it between the time it was cut and when you throw it on a grill.
im one of those freaks who likes to work his jaw muscles on a tough overdone steak
Implied in your statement so maybe it goes without saying, but just in case someone doesn't know, ground beef does need to be cooked thoroughly because the inner portion was exposed to bacteria during preparation.
