Insect carapace is non digestable. Not like fiber, just undigestable. They tested this years ago in a lab.
Repeated consumption of bugs, especially ones with lots of carapace caused the immune system to start to go on high alert thinking that the person was in a desperate situation and food was scarce, or they had a parasite because the presence of insect parts was so high.
