Butter>seed oils, eggs (especially from an actual, not factory, farm) are great for you, ground beef isn't the best cuts but the "processing" is really just grinding and red meat is good for you- another one of the Big Lies.
Not sure on cheddar but I think in general moderation, non-processed cheese (ie not Whiz or those slices but real fucking cheese) is just fine for your health. Last time I was in Europe they seemed to eat a fair amount of cheese and were in better shape than us.
