Demand for beef is manufactured: no, not really. IIRC, Beef consumption per capita was fairly stable until WWI, when it crashed. Didn't recover until the late 60s, really.
Beef is heavily subsidized: counting the corn and soy subsidies that go into the food, yes. Beef itself is a razor thin margin commodity crop. This is why most beef is corn finished.
Demand has recently dropped...: Actually, supply dropped first. We are down about 7% or so year over year, and that's been steady since 2020. Ranchers can't get cows to the feedlots because the feedlots can't get cows to the processor because no one wants to work.
