Anomen was the female romance option. The only female romance option, because the devs were evidently expecting mostly guys playing male characters back in 2000 when the games originally came out.
There weren't many non Elf options companion wise.
Nalia was likely too tied up in being a noble what with her quest chain there, one that may have likely required the player to be a martial class in the first place so you actually get the keep where the chain then takes place.
Mazzy would probably have been a very popular choice, if just because her VA is Jennifer Hale, although shortstacks in general are liked.
The only other option is Imoen, who for plot reasons is off limits.
Overall it's not a big part of the game and can be ignored if players choose to, but I've always done it when playing, although with the mods fixing things because that bit you mentioned about Jaheira ending abruptly I think was one of the many broken scripts. Luckily you don't need the EE for those fixes.
KotoR romance was quite binary, you either romanced Bastila if you were a guy, or Carth if you were a girl. Canon player is male though so Bastila is the canon route what with the fact several descendants exist in later material such as Satele and Theron.
KotoR 2 was more nebulous because nobody actually really mattered. Canon wise The Exile was female which meant you options were Atton Rand, or the male Jedi Mical you get in place of the Maiden if you were a male character. Males got the aforementioned Maiden, Brianna, or Visas Marr, the blind Miraluka.
Unfortunately as with lots of KotoR 2 the romances were cut content wise so not much actually happened with them, regardless of improved gameplay when compared to things like Baldur's Gate style games.

You forgot the best female companion, Edwina. While not romanceable by the player, Misc does try.
