"White" is a reference to a species whereas Italian is a subspecies. Preferring your more specific label to differentiate you from all the rest makes sense.

White is a species. There's about 4 distinct species of humans:

White
Black
Asian
Oceanic Indigenous

Everything else is a hybrid and/or subspecies more-or-less.
