It is not betrayal to not defend Taiwan (though I hope the US does), because princes break their word when it is not in their interests, and Taiwan knows that full well.

And it is still 100% in America's best interests to defend Taiwan to prevent aggression from a resurgent CCP empire even from a realpolitik perspective, but there is also a moral, principled component to it as well. It is a moral imperative. Americans are (or were) raised to believe that we stand at the tip of the spear to defend freedom and democracy against the evils of communist aggression. You might remember the Cold War, which was still in full swing when I was a child growing up in the 80s.
