I think the vast majority of the population wouldn't even know where to start to do that. I sure as hell don't know where/how to buy in bulk or how to butcher anything.
Yeah if you learn to cook it is kind of amazing. You can use every part of the animal. I only recently got into making broth/bone broth, and I'm sad I didn't do it sooner. It's awesome to, for example, roast a chicken for a meal and then use the leftover carcass to make broth to drink the next day. I kick myself thinking of how much nutritious food I wasted before...
Buy bulk, cut yourself. It's cheaper that way.
