Not every country is open to every passport holder (obviously), so that's why I limited my choice, largely, to those I mentioned...

I've been thinking about this for YEARS, though. Ever since fucking up my exchange chances at Uni, ha. So... Yeah. That's why I'm interested in your thoughts, I guess.
Also stand a chance of getting a student visa to Sweden (yeah yeah), or possibly a teaching job in Japan, but both of those are more complicated/time-consuming (plus $$$) processes...
Definitely avoid Scotland. I don't actually know much about Wales, you'd have to do your own research.
Eastern Europe is an interesting choice, depends if you're moving permanently or not. I wouldn't work there then go home, the wages are awful.
Have to be honest, I've never looked into Portugal much. I always dismissed it because it's close to Spain and I imagine it's similar.
South America is a no-go, you won't be allowed in most likely due to the pandemic situation there.

Well, I think you should set out what is most important to you and decide based on that, because nowhere is perfect.
