Just when you think we have reached the height of stupidity, Epicurious (an astonishingly stupid name to begin with) decides to cancel beef because... climate change.
Today we announced that Epicurious is cutting out beef. It won’t appear in new Epi recipes, articles, newsletters, or on social. This isn’t a vendetta against cows or people who eat them. It’s a shift about sustainability; not anti-beef but pro-planet.
Our mission hasn’t changed. As always, we hope to inspire home cooks to be better, smarter, and happier in the kitchen. We understand you’re going to have questions, and we’ve tried to anticipate some of them. We’re also here to continue the conversation.

Ground beef heart mixed with a bit of fattier meat makes a great chili base.
Properly prepped and cooked, liver can be tolerated.
But kidney is absolute shit.
Well, it's the body's water filter, so it's probably loaded with all kinds of gunk accumulated over the cow's lifetime.
I'm not surprised people like heart and tongue. They're specialized muscle tissue, but still muscle.

Most, if not all, places that will sell you a cow or half cow will happily cut it up however you want. They usually sell as a bunch of pre-cuts and ground beef, as Mr. FuckCNN said above, but you can always ask for something special.
If you live in places outside of DC, likesay farther out than the farthest sticks of NoVa, many of those same places will also offer a whole or half hog, venison, and sometimes even bison.
I don't know if this is a regional or family thing but giving a newly wed couple a half cow is "the thing to do." It's a fairly modern idea as it implies that the couple has refrigeration/freezer but it's not that far from the idea of a dowry and the husband taking over the herd.
You could probably take it to a local butcher. There are videos on youtube that go into a lot of detail about how to do it.
