I have experience in using Matrix, so I can answer some questions.
In terms of security and encryption, it is MUCH better than Telegram, but probably not as good as the gold-standard Signal. Also, keep in mind that not all rooms have encryption enabled from the start. And encryption on Matrix can be a pain since if you have connection problems, messages can be disrupted and only show an encryption error.
The Mobile App leaves much to be desired, since it crashed quite a bit and also have trouble with making sure you stay up to date.
I check the room between daily and weekly depending on when I remember. It makes sense for everyone to set it up as well as make accounts on poal and saidit in case this forum goes down.
Regarding the mobile app - which one? There's more than one since Matrix is an open standard. I hear good things about Element. https://element.io/

Don't get me wrong, I think Matrix/Element is probably the way forward at this point, but beware that encryption can be fussy at times which would lead to messages becoming lost to "unable to decrypt" errors. Just a heads up.
