Not an opening theme or rock, but Escaflowne's Dance of Curse remains one of my favorite pieces of music.

For openings...ah I've seen too many to really pin down a favorite so I'll just fall back on some good old childhood nostalgia. The original Dragon Ball opening still puts a smile on my face: https://www.youtube.com/watch?v=Mht7phPbd0Y
