It does make a difference: a bondsman is a businessman. If he gives the court $2,700 to bail you out of jail it's because he's expecting $3,000 back when you go to court, and he won't lend you that money unless he thinks it's a good investment. An ideologically motivated non-profit just wants to get a criminal back on the street, and doesn't mind forfeiting $3,000 to do it.
A drifter is an obvious flight risk, which forfeits your bond. A serial felon is an obvious risk of further criminal activity, which forfeits your bond. If he was forced to rely on a bondsman to post bail he would not have posted bail, because he's an obvious bad investment.
