Does this war extend outwards? Regardless of the answer to the first question, is it "all Chinese must die", or is it "Chinese-Americans must die, those who are in Canada are fine."?

The third answer is actually the most important one, because on the micro and short term, the other two matter, but long-term, the USA would nuke itself and trigger a nuclear winter. Auto-response firings would cause the rest of the world to also ravage most of the world's arable farmlands. To live, you would need a powerful greenhouse capable of feeding hundreds, powered by nuclear energy to make the light and heat since no light would reach Earth... Like that found on the Oasis-class cruise ships. They cannot be destroyed or lost in the missile fight, so at-sea they would be safe. There are other such things, but they would not have enough scale to repopulate humanity. If they're at dock, humanity goes extinct, however slowly as genetic inbreeding allows with restricted genetic stock. If they're at sea and full, and majority one "race" so the early "race war" aspect doesn't eliminate too many of them, humanity will eventually repopulate.
