If you need to coat your food in 15 different spices and herbs, out of which most get burnt anyways and give the food that disgusting charred taste, then either your food quality is terrible and/or your taste buds are fucked.

Of course, because onions and garlic are notorious for going bad after just half a day and costing a fortune, dem kingz n qweenz mus eat da powdaz cuz da hwyte man be eatin all the fresh seazonin shieeeet
Besides your obvious point, a less obvious one is... Powders don't give more bang for your buck. You need an astronomical amount of garlic powder to equal just smashing a garlic clove.
The more processed something is, the more expensive it is. General rule that is obvious in hindsight: More steps in the process, more hands touching the food that need paying.
Onions are so cheap that i cannot buy them per onion but by 500 gram or kilo. So the onions spoil because as a single person I am not eating a kilo of onions in the time before it spoils.
I put my onions in a colder and dry old cupboard during the colder parts of the year and they stay good for months, same with garlic, shouldn't take you long to go through them if you cook often.
