The three first Peter Jackson movies are fantastic, and a clear recommendation for everyone. You should definitely watch those. There are a few clear differences, like Arwen being the one to rescue Frodo on Wintertop instead of Glorfindel, and Tom Bombadil and the Scouring of the Shire being cut out entirely, but it's still definitely a clear homage to the books and extremely well-made movies.

For the Hobbit movies, I wouldn't recommend watching them in the traditional way. Look up on your favourite search provider for "The Hobbit The Tolkien Edit", and grab one of those fan-made movies. Basically someone put all three movies into one and cut out all the content that's not actually in the book. Overall, that makes a far better movie than what we actually got, with about 10 hours of screentime cut to 4h30. That one would be worth a watch.

For everything Ring of Power related, don't even bother. Instead, I'd recommend reading The Silmarillion, if you haven't already.
