Stretch Panic
An unusual one of a kind platformer game by Treasure where the emphasis was on touching and pulling at objects. Once you've beaten a boss, they go into the gallery where you can pull, pinch and touch them like you can Mario's face in Super Mario 64.
Rez
You play a hacker trying to take down an AI. But the movement and controls are synced to the music. It plays and feels similar to Panzer Dragoon, but saying that doesn't give you the entire feel of the game.
Killer 7
An action game that plays similar to Virtua Cop or Lethal Enforcers in that style of first person perspective shoot the bad guy sort of style. But again, saying 'it's like that' is just one layer of the game. Enemies are called "Heaven Smiles" and can be heard laughing when they're nearby. You have to scan the area to find them, then you can take them out with your weapon. It's got a really unique visual style, too.
Kuon
A Resident Evil style explore a haunted mansion sort of game by From Software. You play as a set of three characters, each with their own skills and inventory. Enemies create negative energy zones that can affect the player character, giving them vertigo and causing the visuals to get all weird and fuzzy. You can stand still and meditate to make things go back to normal, or use the healing items found in the game.
Chulip. (Written as Chu♥lip)
It's a puzzle game disguised as a top down 3D adventure game. The object of the game is to kiss everyone in the village. You'll need to as some of them give you extra health with a kiss. The puzzle comes in knowing when and where to kiss them. Some NPCs live in little underground caves, giving the player a very limited opportunity to give them a kiss. If the player successfully kisses enough NPCs and returns home to sleep, the hero's father will recite his progress and the Lover's Tree will give the player more hearts and an improved reputation if he advances. There's also a love letter you have to assemble in pieces that you'll need to find. As the story progresses, the player gains access to new areas of the game world through a train, which include many more underground residents and hazards. Saving takes place in various bathrooms before Trevor made that cool.
Ico
Everyone's heard of or played this, as well as Shadow of the Colossus, so i'll keep it short. It's a highly immersive platforming game where the object is to solve puzzles to get yourself and Yorda out of the abandoned fortress you've been locked in. More fun than it sounds.
There are also some odd, wacky and interesting games on the PS1 that you can discover too. if you've got a PS2, it can play PS1 games as well.
I won't go into details about these ones, but you're free to look them up.
